KILLEEN, Texas — Since 2019, Chef Josie McKinney, owner of Let’s Eat Texas in historical downtown Killeen , has been serving Central Texans with her coffee house, eatery and cooking school, triple threat. But her journey began far from the Lone Star State.

From Alaska to Texas

Born and raised in Alaska, McKinney is a fifth-generation Alaskan who grew up learning how to get creative with limited ingredients. She recalls fishing, hunting and breaking down moose and salmon to put food on the table.

It wasn’t until her late 40s that she decided to relocate.
