Roast potatoes are a winter comfort food favourite, and there's nothing quite like dipping a crispy spud into a pool of gravy. However, due to their high water content, potatoes often release a lot of steam while cooking, which can result in a soggy and bland taste.

Georgina Hartley, a culinary expert from From The Larder, has shared her secret for achieving perfectly roasted potatoes: she never boils them in water. Instead, she opts to gently bake her potatoes in cream until they're tender enough to pierce with a fork, resulting in a superior texture.
