PORTLAND, Maine — Chef Daron Goldstein from Provender Kitchen + Bar in Ellsworth joined us in the 207 studio to share some of his favorite recipes.

This time, he showed us how to make a cheese sauce that can be used in a variety of ways. For his demonstration with us, he used it on top of pasta, cauliflower, and nacho chips.

Immersion Blender

Small Heavy Bottom Pot

Timing

Active Time: 15 Minutes

Total Time: 15 Minutes

Yield: 1.5 Cups

Ingredients

6.8 ounces of your favorite cheese

7 ounces milk

1 teaspoon sodium citrate

1/2 teaspoon salt

Combine and Melt

In a small pot over low heat, combine all ingredients listed above.

Gently cook until cheese is melted.

Blend, Cool, and Serve

Using an immersion blender, blend the contents of the pan until smooth and uniform.
