JAMES ISLAND — Caitlin Schumacher has dreamed of opening a bakery for 30 years.

Her father, John McCormick, who filled out an application for the Culinary Institute of America after graduating from high school but became a lawyer instead, has envisioned this moment for much longer.

Together, Schumacher and McCormick opened Girl Nextdough in September. The 1939 Maybank Highway brick-and-mortar bakery debuted four years after Schumacher launched the concept as a food truck in September 2021.

Back then, the former FIG pastry chef thought Girl Nextdough would be more of a hobby than a profitable business. Residents of James Island, where she parked the truck, thought otherwise.
